Chocolate cake with coffee frosting

My sister and I made this amazing chocolate cake and made some changes to make it gluten free.

  • 300 gr chocolate
  • 100 gr brown sugar
  • 3 dl milk
  • 200 gr butter
  • 6 eggs
  • 300 gr sugar
  • 2 teaspoons vanilla sugar
  • 300 gr teff flour
  • 2 teaspoons baking powder

Mixing the melted chocolate with the egg nog

Melt the chocolate, brown sugar, milk, and butter on the stove at low heat. Let it cool down afterwards. Whisk together the eggs, sugar, and vanilla sugar with an electric mixer for approximately 10 minutes, until it is white and fluffy. Then put the electric mixer away and pour the chocolate mixture into the egg nog slowly while stirring.

Mix the flour and baking powder together, and add that while stirring.

Put the dough in a baking pan of approximately 34 x 22 cm (13,4 x 8,7 inches) and bake it in the oven at 165 *C (329 *F) for 40 minutes.

Coffee frosting

  • 500 gr powdered sugar
  • 6 tablespoons soft butter
  • 3 teaspoons vanilla sugar
  • 7 tablespoons strong coffee
  • Add a little water if the frosting is too dry when you put it on the cake.

Mix all the ingredients and stir with an electric mixer until the frosting looks creamy and fluffy.

Yum! Coffee frosting is a great idea, especially with chocolate cake, and I love the idea of only using ONE flour.
